Savory Poached Red Snapper

5 pieces of fresh red snapper (middle section), cleaned
1 handful of fresh basil leaves
2 pieces of Kandis tamarind (Can be substituted with green tomatoes or fresh starfruit)
1/5 teaspoon of salt
1 teaspoon of granulated sugar
500 ml of clean water
1 stalk of lemongrass, bruised
2 segments of ginger, bruised
1 piece of turmeric, crushed
4 pieces of bird’s eye chilies, halved
1 large clove of shallot, sliced
Boil the water in a pot.
Add the fish, Kandis tamarind, salt, and seasoning paste.
Cook until the fish is done.
Add granulated sugar and the basil leaves.
Stir until well combined.
Remove from heat and serve.
