How to make ice cream
Before starting, first determine the composition or formula, for example:
Water …………………….……50%
Milk fat…………………….14%
Maizen…………………..….16.2%
Stabilizer………………..…..0.3%
Skim…………………………14%
Sugar……………..………….15%
Emulsifier………….…………0.5%
- 1800 mL water
- 250 gr sugar
- 125 gr cornstarch
- 200 ml water
- 3 gr stabilizer base 2000/ agar-agar powder
- 750 gr skim milk
- 350 gr milk powder kw1/ dancow
- 5 gr Cortina
How to make ice cream walls
- Boil 1800 mL of water with sugar until it boils, remove from heat. While hot, add the cornstarch which has been dissolved in 200 mL of water. Chill.
- Enter the stabilizer / agar-agar powder, stir until mixed while pouring skim milk and dancow milk. Once mixed well, put the chiller until half frozen.
- Remove from chiller, stir while adding Cortina until fluffy, and add flavoring or pasta.
