Cook my husband’s mother-in-law’s favorite food I bought half a kilo of chicken heads and a kilo of chicken wrap
Plus blondo left over from making coconut oil yesterday
Ingredient
- Chicken balungan 1 Kg
- Chicken head ½ Kg
- 10 pieces of Orange Leaves
- 5 bay leaves
- Garlic 6 seeds (finely chopped)
- Lemongrass 1 stalk (in geprek)
- Crushed dry seasoning (a mixture of ginger, Indian cardamom, ordinary cardamom, cumin, cloves, black pepper, cumin) 1 tbsp (I always stock this for making chai masala)
- Blondo oil ± 250 grams
- Thin coconut milk ± 1 liter
- Grinding seasoning in the Gule flavor market 2 sachets
- Salt 3 tsp
- Sugar 4 tsp
- Flavoring ½ tsp
Method :
- Wash the bones and head of the chicken thoroughly and then boil
- When it’s boiling, throw away the first boiled water
- In another pan, heat the oil, add the chopped garlic and lemongrass, sauté until fragrant then add the ground ginger flavored spices and crushed dry spices then stir well.
- Add blondo stir until blended
- Add the broth from the chicken bone stew earlier along with the lime leaves and bay leaves then add the coconut milk
- Lastly, add the bones and head of the chicken, cook until it boils while stirring so that the coconut milk doesn’t break
- When it’s boiling, turn off the stove then add sugar, salt and flavoring, correct the taste if it’s less salty or sweet, please add sugar or salt
