Donut ingredients
- 600 gr high protein flour
- 150 gr of medium protein flour
- 35 grams of powdered milk
- 6 yolks
- 90 grams of sugar
- 12 gr yeast
- 90 gr margarine
- ¼ tsp salt
- 370 ml of cold water (you can also use cold liquid milk)
Produces 46 donuts weighing 30 grams each

How to make donuts
- Add all ingredients, knead or mixer until combined
- cover the dough, rest for 20 minutes so that gluten forms, the point is to shorten the mixer time or kneading time, so that it becomes smooth quickly,
- after 20 minutes, continue mixing or kneading until smooth and elastic
- divide the dough into 46 parts, each weighing 30 grams
- rounding or rounding the dough until the surface is smooth
- rest again for 10 minutes
- take the dough that was first rounded, then sprinkle with flour and flatten or degas, for milk donuts.. I punched holes using my fingers..
- rest again for 30 minutes until fluffy
- heat the oil over low heat, fry until golden, just turn once so it doesn’t absorb a lot of oil
- after the donuts are cold, just sprinkle with powdered sugar or cold sugar,
- for the bomboloni filling, poke a hole in the edge of the donut with chopsticks, then fill it with chocolate jam
- for milk donuts, sprinkle with powdered sugar + powdered milk, the ratio is 1: 1
