The name for lapis chocolate in Manado is Balapis Manado, a snack that is widely available in stalls or cake shops. Including one of my family’s favorite cakes…

This layer can be made beautiful, with a variety of colors and scents. But, because at home the most preferred is only brown and white, like it or not, I just want to make the standard one.

ingredient BALAPIS manado (COCONUT LAPIS)

Dough A:
120 gr white sugar
250 gr flour
1 tbsp tapioca
1 tbsp rice flour
450 ml thick coconut milk
1/2 tsp salt
1/2 tsp vanilla

Dough B:
120 gr white sugar
230 gr flour
1 tbsp tapioca
1 tbsp rice flour
3 tbsp cocoa powder
450 ml thick coconut milk
1/2 tsp salt

How to make BALAPIS manado (chocolate layer)

  1. Mix the dough ingredients A, then strain.
  2. Also dough ingredients B.
  3. Prepare the steamer, pour the mixture into the pan (plate) alternately until it runs out.
  4. Usually it takes 3 minutes each layer. Last steamed 20 minutes.
  5. Wait until it is completely cold before you can cut it.
